Tasting notes

  • Cod, middle cut

Thick white flakes that hold their shape when steamed or seared. A quiet, clean flavour that takes well to butter and herbs.

  • Whole saury

Fine, oily flesh that crisps beautifully in a hot pan. A squeeze of lemon is really all it asks for.

  • Babylonia snails

Sweet, springy meat. A quick blanch, a little garlic and chilli, and they are ready to share.

  • Cuttlefish

A firm, meaty bite that stays tender with a fast sear. Lovely with herbs, lemon and a little heat.

Golden-spotted frozen cleaned eel segments on ice (2/3)
Whole large frozen Pacific saury on a slate platter (2/3)

    Slow thaw, simple perfection

The beauty of premium fish starts with gentle thawing. Slow-defrost in the fridge overnight, pat dry, season lightly, and a hot pan reveals its true ocean taste.
